Ingredients

  • 1 tbsp olive oil plus 1 tbsp sesame oil
  • 1 onion, diced
  • 2 tbsp chopped ginger
  • 1 red capsicum, diced
  • ½ x 1kg pack McCain Peas & Super Juicy Corn
  • 4 cups cooked rice
  • 2 eggs, beaten
  • 2 tbsp soy sauce

How to make it

  1. Heat oils in a large frypan and cook onion, ginger and capsicum for 5 minutes.

  2. Add McCain Peas and Super Juicy Corn, then stir through rice and cook until warmed through.

  3. In a smaller pan, cook beaten eggs to a fine omelette, swirling pan to cook evenly, then remove from the pan and slice.

  4. Add to rice mixture with soy sauce, then serve
