Quick & Easy Fried Rice

Ingredients
- 1 tbsp olive oil plus 1 tbsp sesame oil
- 1 onion, diced
- 2 tbsp chopped ginger
- 1 red capsicum, diced
- ½ x 1kg pack McCain Peas & Super Juicy Corn
- 4 cups cooked rice
- 2 eggs, beaten
- 2 tbsp soy sauce
How to make it

Heat oils in a large frypan and cook onion, ginger and capsicum for 5 minutes.

Add McCain Peas and Super Juicy Corn, then stir through rice and cook until warmed through.

In a smaller pan, cook beaten eggs to a fine omelette, swirling pan to cook evenly, then remove from the pan and slice.

Add to rice mixture with soy sauce, then serve
