McCain Delish Italian Style Potato Bake 500g
- 2 x 175g chicken breast fillets
- 100g green beans
- 1 tablespoon pine nuts
- 1 tablespoon olive oil
- 1 tablespoon finely shredded basil leaves
- ¼ cup finely grated Parmesan cheese
- 1 teaspoon crushed garlic
- 1/3 cup white wine
Method
1. | 1. Heat a frying pan over medium-high heat. Add pine nuts and cook for 3-5 minutes, stirring frequently, until golden brown. Remove pine nuts and set aside. |
2. | 2. Return pan to heat and add oil and chicken breast and cook for 5 minutes before turning over. While still cooking, combine pine nuts, basil and Parmesan in a small bowl and spoon evenly over chicken and cook for a further 3-5 minutes or until chicken is just cooked. |
3. | 3. Reduce heat to low, add the green beans to the pan, top with garlic and pour over white wine. Allow wine to simmer gently and 3-5 minutes or until beans are cooked. Sprinkle with extra fresh basil and Parmesan. |

Delish Italian Style Potato Bake and Pan-Fried Chicken with Basil & Parmesan

Ingredients
4 ounces McCain® Sweet Potato Fries
4 8" flour tortillas
¼cup vegetable oil
½ cup sour cream
¼ cup prepared salsa
1 cup shredded Monterey Jack cheese
2 cups mixed grilled vegetables
1 cup Black Bean-Corn Salsa (recipe follows)
1 cup Lime Sour Cream (recipe follows)
Black Bean-Corn Salsa (makes 8 servings, ½ cup each)
2 cups canned black beans, rinsed
1½ cups frozen corn, reheated and cooled
½ cup diced red bell peppers
2 tablespoons vegetable oil
2 tablespoons cilantro, chopped
2 – 4 cloves garlic, finely chopped
Salt and black pepper to taste
