Product used:
- McCain Delish Chilli Passata Potato Bake 500g
- 2 small cauliflowers
- ½ teaspoon turmeric
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon smoked paprika
- 2 teaspoons olive oil
- 1/3 cup natural yoghurt
- 1 tablespoon finely chopped coriander
Method
1. | 1. Preheat oven to 200°C (180°C fan forced). |
2. | 2. Cut two x 1.5cm thick steaks from the centre of each cauliflower. Use excess florets for another occasion. |
3. | 3. Combine the spices in a wide shallow bowl with olive oil. Gently coat the cauliflower in spices and season with salt and pepper to taste. |
4. | 4. Arrange cauliflower on a baking paper lined tray. Bake for 20 minutes or until tender and golden brown. Meanwhile, combine yoghurt and coriander in a small bowl and season to taste. |
5. | 5. Serve cauliflower steaks drizzled with coriander yoghurt, perfectly paired with McCain Delish Chilli Passata Potato Bake, cooked according to pack instructions. Dig in and enjoy! |
Delish Chilli Passata Potato Bake with Turmeric Cauliflower Steaks and Coriander Yoghurt
McCain® Sweet Potato Fries make this quesadilla more delicious and one to remember to make again and again.
Ingredients
4 ounces McCain® Sweet Potato Fries
4 8" flour tortillas
¼cup vegetable oil
½ cup sour cream
¼ cup prepared salsa
1 cup shredded Monterey Jack cheese
2 cups mixed grilled vegetables
1 cup Black Bean-Corn Salsa (recipe follows)
1 cup Lime Sour Cream (recipe follows)
Black Bean-Corn Salsa (makes 8 servings, ½ cup each)
2 cups canned black beans, rinsed
1½ cups frozen corn, reheated and cooled
½ cup diced red bell peppers
2 tablespoons vegetable oil
2 tablespoons cilantro, chopped
2 – 4 cloves garlic, finely chopped
Salt and black pepper to taste
