Product used:
Pub Style Sweet Potato Straight Cut 750g
1 packet of McCain Sweet Potato Fries –cooked as per packet instructions
  • ¼ red cabbage– shredded
  • 3 spring onions –sliced
  • 1 tbs fresh lemon juice

Spiced Chickpeas

400g can of chickpeas – drained, rinsed and dried
  • 1 tbs coconut oil
  • ½ tsp hot paprika
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp onion powder

Avo Lime Dressing

1 small avocado –skin and seed removed
  • 2 tbs fresh lime juice
  • ¼ cup fresh coriander leaves
  • 1 tbs tahini
  • 1 small clove of garlic
  • Freshly cracked salt and black pepper, to taste


1.Heat coconut oil in a medium non-stick fry pan over a medium to high heat, add chickpeas and spices and cook for 10 minutes or until golden.
2.Meanwhile, place all ingredients for the green sauce into a small blender and pulse until well combined. Season with salt and pepper to taste.
3.Place cabbage, shallots and lemon juice in a small mixing bowl and toss to combine.
4.Place McCain Sweet Potato Fries into a serving bowl, layer with cabbage mixture, top with spiced chickpeas and dressing. Serve immediately.
