Ingredients

250g McCain Peas
- 250g McCain Peas
- 250g McCain Corn
- 1kg starchy potatoes, cooked, mashed and cooled
- 1 egg, lightly beaten
- ½ cup flour
- 1/2 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/3 cup flour, for dusting
- Oil to shallow fry
Method
1. | In a medium saucepan, gently boil the
peas and corn until soft. Divide in half, and
mash or pulse one half with a stick blender.
Set both aside to cool. |
2. | Combine the vegetables with the cooled
mash and remaining ingredients, except
the flour. Season to taste. |
3. | Shape into 8 ½ cup-sized patties and lightly
toss in flour, shaking off excess. |
4. | Heat oil in a frypan and shallow fry in
batches, approximately 3 minutes each
side or until cooked and golden. |
5. | Serve with relish or Smoky bbq sauce. |

Ingredients
4 ounces McCain® Sweet Potato Fries
4 8" flour tortillas
¼cup vegetable oil
½ cup sour cream
¼ cup prepared salsa
1 cup shredded Monterey Jack cheese
2 cups mixed grilled vegetables
1 cup Black Bean-Corn Salsa (recipe follows)
1 cup Lime Sour Cream (recipe follows)
Black Bean-Corn Salsa (makes 8 servings, ½ cup each)
2 cups canned black beans, rinsed
1½ cups frozen corn, reheated and cooled
½ cup diced red bell peppers
2 tablespoons vegetable oil
2 tablespoons cilantro, chopped
2 – 4 cloves garlic, finely chopped
Salt and black pepper to taste

Lime Sour Cream (makes 8 servings, 2 ounces each)
